Today is a busy and hard day. I’ve been away from chocolate and chocolate making for two weeks due to a head cold. Rather than push on, I stayed away.

Why does that make today busy? Well, for two weeks all the equipment has just sat. The kitchen has a little bit of dust. So I have to clean and sanitize all of the equipment. As well as clean and sanitize the entire kitchen area. Dont want any dust getting into the chocolate.

Each of the 3 melanguers needs to be broken down to it’s core components. Each then needs to be rinsed off with hot water. Then scrubbed with a light detergent and water. Then sanitized and rinsed off.

With any luck, I should have my first new batch in tonight.
